Be careful when you buy saffron powder (we sell stigmas only), often it is not pure saffron. Saffron can be substituted for example with powder curcuma. Many fakes are now common today. Various methods of falsification on the market are made from a mixture with a foreign substance such as beet, pomegranate fibers, silk fibers or corn dyed red. The saffron powder is often adulterated with turmeric, paprika, powder samples of ballast and others. The counterfeiting may also consist of the sale of mixtures of different qualities of saffron.


The true saffron is often confused and sometimes mystified

by the other three plant species:

  • The safflower (Carthamus tinctorius) or safflower; is a thistle-like plant, whose flowers yellow orange provide a substitute without the scent of saffron.  From the seeds of safflower is extracted oil prized for its richness in linoleic acid and vitamin K.
  •  Turmeric (Curcuma longa), known as the saffron of the Indies, belonging to the family Zingiberaceae; from the rhizome of turmeric you get the yellow turmeric powder, a spice widely used in Indian and Asian cuisine in general, and curcumin, yellow substance worked in the laundry and in chemistry.
  • The colchicum (Colchicum autumnal) poisonous plant whose flower is like the crocus.

Other frequent falsification consists in adding to the stigmas of the crocus flower fragments from other species: example Calendula officinalis, Carthamus tinctorius, Poppy, Arnica. Adulteration of saffron powder is even easier to realize: you add vegetable powders (allspice, turmeric, etc.), sugar, starch or limestone.


As always, cause of its high price , saffron is the victim of adulteration . Already in the first century A.D. the writer Plinio complained about how " there is something you falsifies as this one."


To replace the saffron is often used as safflower , also called saffron false, or using calendula or turmeric powder , called turmeric , which does not have the same properties or the same flavor . The differences between these plants , as well as the aroma given off once which dissolve in water , can be recognized under the microscope. In the worst cases of counterfeiting is used to hemp , hair of the rods and filaments of jelly. Finally , exhausted all other ruses , is coffin on the weight, which can be increased with the addition of oils, greases , powders, clay . So you should always be wary of crocuses POWDER not guaranteed by reliable suppliers, or cheap : typically are adulterated or counterfeited .
◦ The powder should be completely dry : the envelope should slip off easily. If it contains moisture means that there are micro-organisms . At best, you're buying more water than saffron.
◦ The color should be uniform : bright red , shiny, no white dots , blacks or red light , a symptom of poor quality.
◦ To determine whether this is a genuine product or not colored , saffron is dissolved in water or milk if the liquid turns faster then it is adulterated . Saffron authentic , in fact, needs a few minutes to be mixed with a spoon to release its colors.

                                                                                                     SAFFRON STIGMAS

Even saffron stigmas is sometimes adulterated .
The stigmas of authentic SAFFRON COLOR IS RED . BUT QUALITY MOST VALUABLE IS DARK RED COLOR . To find out if this is true and pure saffron threads , you have to put the product in a little warm water to make develop the color and aroma . In practice, the water must remain only the stigmas ivory (which also must be paid to them in food because they are rich in antioxidants and pleasant taste ) and the water must be deep yellow . If it does not mean that the product is impure or not saffron. So the water absorbs the color of the stigmas and if the stigmas are still colored it means that it is not saffron. Also really pure saffron remains red even when it is pulverized . In fact, below you can view our powdered saffron which is always red .

As you can see the stigma (wire) saffron is composed of a noble dark red marked by the blue arrow (which is part of the rich in antioxidants and anti-cancer Saffron SAVE LIFE )  SAFFRON SAVE LIVES, a yellow part marked by the yellow arrow , and then a third part  white marked by the red arrow . When you buy saffron stigmas you can use it directly in stigmas or pulverize it (just a machine that pulverize ) . pulverizing if the poor of saffron stigmas remains red like ours means that you have selected the noble and precious saffron and the rest has been deleted. Of course , this means that are needed more red parts to make 1 gram but it also means that saffron is the most noble and most precious . The farther you move from the dark red color is less noble and valuable . When in the market you found yellow  powdered saffron could mean that it is not really saffron grade or even, in some cases , be adulterated with the addition of other substances listed above have a lot less expensive .
